The History of Balsamic
Although probably discovered by accident, traditional balsamic vinegar has long been treasured as the perfect healing tonic for external and internal well being–so much so that in medieval times this “liquid gold” was presented to royalty as gifts.

Balsamic vinegar is a reduction made from grapes, but it is not considered a wine vinegar because the grape juice used is unfermented. The unfermented white sweet grape juice that is used is called “must” and comes from Trebbiano grapes.
